They have some great suggestions on how to have a fool-proof Thanksgiving feast. Check it out if you need suggestions on your turkey, side dishes, or fun cocktails! Below is one of my easiest, fool-proof dinners. It is a version of shrimp scampi without butter!
This recipe is one of my favorites, as it is my mom’s recipe and I used to beg her to make it before I left for college. I always have frozen shrimp and garlic cubes in the freezer and pasta in the pantry, and I’ve had to learn to make do without my mom. Sometimes I will also sauté some spinach, onion, or mushrooms to add in, but here is the basic recipe you can use to build on!
Garlic Shrimp Pasta (serves 2)
- 1/4 c olive oil
- 4 cloves raw minced garlic (I use these frozen ones)
- 10-12 peeled and deveined shrimp (if frozen, let them thaw in a bowl of cold water)
- 2 servings of your favorite pasta (I like whole wheat spaghetti)
Start cooking your pasta while you heat up your olive oil in a frying pan on medium. Add your garlic and let it cook for a minute or two, without browning it. Turn the heat to low. Add your peeled, de-veined (and depending on your taste, de-tailed) shrimp to the pan.
Cook your shrimp on one side for about 3 minutes until the shrimp begin turning pink on the bottom, and then turn them and cook for another minute. Turn the heat off as soon as the grey color disappears from the shrimp.
To your pan, add your hot cooked pasta and 1/2 c of the starchy pasta liquid to the shrimp, olive oil and garlic. Salt and pepper to taste.
