This is a joke, right? Healthy chocolate and peanut butter pie? How could you make that taste good? healthy version of a decadent dessert? Meet tofu, my friends. I have always had an affection for firm tofu, but not until now did I realize the potential of silken tofu. From this recipe to soups to smoothies, it has a potential to bump up protein and produce a creamy texture. Win.
Yes. if you didn’t love tofu before, you will now- mostly because you can’t taste it among the chocolatey and peanut buttery decadence. It takes away your traditional chocolate pie ingredients- sugar, butter, cream cheese, more sugar, heavy cream- and replaces it with a protein packed, nutritious substitute. The texture is identical; I fooled many a friend with this pie!
Healthy Chocolate Peanut Butter Pie (makes one 9″ pie)
- 9″ graham cracker pie crust
- 12 oz semisweet chocolate chips (usually 1 bag)
- 1/3 cup peanut butter
- 1 tsp vanilla extract
- 16 oz silken tofu
- 1 tbsp honey
- Topping: chocolate shavings and peanuts
Using an immersion blender or a whisk, whip the silken tofu so that it has a fluid consistency (it comes in a soft block). Whip/blend in the honey and vanilla extract.
Using a double boiler (place a mixing bowl on top of a pot with simmering water), melt your chocolate chips. Stir constantly. Add peanut butter when the chocolate chips are smooth (like below), and mix until combined.
Add the tofu to the peanut butter and chocolate mixture, and blend/whisk until combined. Pour it into the graham cracker crust and refrigerate until firm. Shave chocolate onto the top and add some chopped peanuts if you want. That’s it!!
