Fridays are for grilled cheese sandwiches, dressed up fancy with caramelized onions and sautéed (yes, with the accent) mushrooms and a mix of cheeses laying in your fridge. I am sure you have at minimum, two kinds of cheese in your fridge, right? That is the bare minimum to make your sandwich delightful. I also used my new favorite Ezekiel cinnamon raisin whole grain bread, which brought it to the next level. Make one for you and one for your friend, and I promise you will be friends forever.
Caramelized Onion & Mushroom Grilled Cheese (recipe per sandwich)
- 3 slices of onion (~1/4 cup onion)
- 1/2 cup sliced mushrooms
- 3 oz mixed cheeses (I used 2 oz swiss, 1 oz hard goat cheese)
- 2 slices of Ezekiel cinnamon raisin whole grain bread
Cut your onion into a few slices and begin caramelizing them in a pan with a little butter on low to medium heat. Stir them frequently until they begin to break down and brown. Add in your mushrooms and cook until slightly soft, but you still want them to have a bite.
Top one piece of bread with your cheese and then add the cooked onion and mushroom mixture. Grill it in a pan on one side with butter or olive oil for 5 minutes on one side, and then flip and grill for another 2 minutes.
Serve it with salad. Devour!

Thanks! The lighting was perfect! My staples are swiss, sharp cheddar, and mozzarella. The hard goat cheese was a fun splurge to try something new.
