Noah and I left for our trip to Asia yesterday evening. We flew from Denver to Seattle -we are now on our 12 hour flight from Seattle to Taipei, and then we fly Taipei to Hanoi- and on Friday our adventure begins in northern Vietnam and continues in Hong Kong. I could never have imagined it coming up so quickly, and that was obvious from our quick packing job these past few nights. I am excited to share snippets of our adventure over Instagram (@uprootfromOR) while we’re abroad, and I will do some “What I Ate” posts when I get back to introduce you all to foods I found! I promise to try some weird things and get out of my comfort zone!
Fall has quickly come and gone this October, and I know by the time I return from Vietnam it will be full-fledged winter here in Denver. While we have been busy planning our trip this past month, we had a mini vacation petsitting in Golden for our favorite pup, getting our last farmers‘ market trips in, finding new trendy coffee shops, brewery touring, and crunching around in fall leaves on walks around our neighborhood. I also was able to travel to Wisconsin for work, which was an amazing opportunity to see our project in action and motivate my desk work (as well as have delicious pumpkin pancakes at a greasy spoon). While this month was great, I know our travels these coming few weeks will reinvigorate me and fulfill my travel bug for awhile.
