I am seriously about to give you guys the easiest recipe of all time- one that yields deliciously sugary and crunchy nuts. Who doesn’t love having a bowl of these on the coffee table at this time of year? If you have 2 simple ingredients in your pantry, almonds + white sugar, then you are ready to go! As some of you know, several months ago I won a photo competition for an almond company- and now receive a pound of almonds in the mail monthly (how awesome, though?!). I found this recipe to be a perfect way to deplete my stash and spread the almond love to my friends and coworkers.
If instead you want to use peanuts, you can follow the recipe that I took inspiration from- David Lebovitz’s candied peanuts. I omit the last step of letting the sugars caramelize into a sticky glaze, because I prefer the crunchy sugar exterior that the nuts are coated with (reminiscent of the Nuts 4 Nuts stands that I enjoyed during my time in Chile! They dominate the world with nuts). I’m sure any nut you have laying around will turn out wonderfully with this easy recipe!
Candied Almonds (makes 2 cups, or four 1/2 cup servings)
- 2 cups raw almonds
- 1 cup granulated white sugar
- 1/3 cup water
- Optional: Pinch of cinnamon
- Optional: Pinch of smoked sea salt
Combine your almonds, sugar, and water in a wide heavy pan. Heat the mixture on medium while it bubbles, stirring constantly, for 6-8 minutes.
The liquid will evaporate and the sugar becomes sandy in texture. At that point, turn the heat down to low and stir the almonds vigorously to cover them in the loose sugar for another minute or two. Turn the heat off and add your favorite sea salt or cinnamon.
Turn the almonds out onto a sheet of parchment paper to let them cool completely before putting them into jars or bags for gifts.
