February flew by me with a few unwelcome days of a stomach bug, sibling rivalry over the Broncos/Seahawks game, and a wonderful visit from a close friend. My first time cross-country skiing was with Laurel, who will be leaving soon for the Peace Corps in Azerbaijan. I am happy she made the trip to Colorado beforehand and Noah is already scheming ways to have us visit her abroad. Another first: Trader Joe’s opened in Colorado, and I now can find all the grocery items I need without leaving this state. Dramatic, much? I have already eaten a whole tub of hummus in the 2 days since I went.
The long weekend was spent in Aspen, staying cozy in a mountainside condo while Noah and his family skiied. There was plenty of good cooking and a nightcap at Justice Snow’s. This past weekend, I got myself to another yuppie taco spot called Comida at the Source, in Denver’s River North neighborhood. Noah and I are now the proud owners of a Zojirushi rice cooker. You could call this the month of eating lots of rice (white and brown) and chocolate (from Valentine’s Day, from post-Valentine’s Day sales, and cocoas to warm me up during the snowy weeks). Plenty of friend dinners with Moscow Mules and drinking vinegar cocktail concoctions have gotten me through the dark snowy days.
February, let’s do less snow next year so I spend less time hibernating:

Okay those grits. Yum. And I didn’t think I was a ‘grits’ person. But with goat cheese and the egg and the biscuit…that is everything I want! I always love “what i ate” posts. So great for meal inspiration!

I have another hummus recipe coming up, but nothing compares to how fluffy Trader Joe’s edamame hummus is. No shame in my hummus game! I like having options too.

Great news about TJ. I still remember when we had one less than 3 minutes away. I sure did make some unnecessary visits there throughout the week. Ha Ha!

I know- I am excited. Going back there made me realize there used to be so many prepared foods I would stock in my kitchen, and I am now accustomed to not having them (which in the long run is probably better!). But let me know if you’re ever desperate for a shipment of some goodies!
