Welcome to my monthly recap for March! With the days getting longer, I feel even more like a grandma when I eat my dinner at 5 PM. Getting in bed earlier just feels good lately, and I have been far more productive at work in the mornings. I am even going to start going to the gym before work (I’ll report back next month so you know how long that lasted!). On the weekends, I love feeling like I have a full day when I’m up at a reasonable hour- from leisurely french toast recipe creation, to long walks in the park, to spending evenings cooking with friends. I think another reason why my energy has been up is due to better snacking: plenty of fruit, trail mix, and cupcakes (ha) have kept me fueled alongside my morning java. I strayed from coffee for the winter months but my morning iced coffee tradition is coming back strong, with tea now pushed back to the afternoon. I even celebrated Mardi Gras right with early morning pancakes (to go!).
I crawled out of my winter hibernation mode to have some outdoor fun this month- a patio happy hour after work with a colleague headed to grad school, a whirlwind weekend up in Aspen with an attempt to hike to Hanging Lake (the whole trail was like attempting to walk up an Olympic bobsled track), a quick hike up South Table Mesa in Golden wearing matching Patagonias, and acroyoga at a Denver blogging event for fairlife milk. I met so many cool people this month through friends/friends of friends, and meeting new blogger friends (blends!) was fun as well. I must say, Denver is quickly becoming my home, especially thanks to the people… and the best pho I have ever eaten. If you live here too, let’s meet up for a bowl of vegetarian pho at Pho Duy – I have eaten it 2 out of the past 3 nights. I promise you will be converted too.

I’m SO beyond jealous that you eat dinner at 5pm. I feel accomplished if I do by 7pm and that’s not very often. Yay for warmer weather adventures!

Well, 5 PM if Noah isn’t home haha. I try to eat by 6:30/7 so I can be in bed by 9:30. #grandmastatus. Wish we could go galavanting around outside together!

I love getting up early on weekends- feels like I have longer days to relax! I don’t like my body waking me up that early, but do enjoy how much extra time I have! And that ice cream looks amazing!
