It’s a known fact that I am obsessed with rooibos herbal tea. Rooibos, also called bush tea in South Africa, produces a reddish-brown color tea and is traditionally served with milk and sugar, similarly to black tea. One of the tastiest tea lattes I have ever made was rooibos steeped in hot milk with vanilla syrup. But with the hot weather just around the corner (*fingers crossed*), I am ready to start brewing up more iced tea with fun flavors and lemon wedges to encourage me to drink more water.
By steeping this rooibos tea to make iced tea with honey and raspberries, the strong flavor of rooibos is able to shine through. Known for its high levels of antioxidants, lack of caffeine, and ability to fight cancer (not making this up- as long as you trust Wikipedia for my source), it’s worth trying rooibos if you haven’t before. It has a loyal following!
- 2 rooibos tea bags (or your favorite black tea)
- 1 tablespoon honey
- 1 cup fresh or frozen raspberries
- In a large jar or saucepan, add 2 cups boiling water to 2 rooibos tea bags (or your favorite black tea if you'd like the caffeine). Swirl in a tablespoon of honey and let the tea brew for 7-10 minutes and then remove the tea bags.
- Once steeped, you can stop at this step and refrigerate the tea as concentrate or add a cup of ice cubes to speed up the cooling process.
- For one serving, add ¼ cup frozen raspberries to the bottom of a glass. Add a cup of ice on top of the raspberries and pour ½ cup of the rooibos tea concentrate on top.
- Add an extra ½ cup cold water to the top and give it all a stir (skip this step if you diluted your tea with ice cubes to cool it down).
- Serve cold.
Enjoy, preferably on a patio, while using a straw to mash the raspberries into the iced tea. And definitely fish the ice tea soaked and mashed pieces of raspberry out of the bottom of your glass if you didn’t get them all up through your straw.
