Cheers to June bringing us the beginning of great summer produce! I am so excited that I signed up for a fruit share, but more on that later this summer when it actually starts. The blueberries in the grocery store lately are killing me they’re so juicy! Blueberries are a food that I was never sure if I loved- mostly because I didn’t always get the sweet, juicy ones. The little wrinkly ones that make my mouth pucker have just soured the experience for the rest of them, I guess.
These recent blueberries I bought from Sprouts were so good (and $1 a box) so I ended up with 12 boxes over the course of the past week. I’m not complaining, but please let me know if I start turning blue as I pop em all day.
Find the juiciest blueberries you can for this smoothie recipe- you don’t need any sweetener because they aren’t tart & because the frozen pineapple adds a nice sweet tropical flavor. I always use a banana in my smoothies to make it thick and substantial, and I recommend always having a peeled, frozen banana in the freezer for a perfect smoothie (or: healthy chocolate bon bons!). You can use all frozen fruit for this recipe or some fresh- whatever you have on hand! Expect more smoothie recipes to come this summer as I continue with my fruity obsession over blueberries, peaches, strawberries, and my beloved frozen banana.
- 1 frozen banana
- ½ cup blueberries
- ¼ cup frozen pineapple
- ¼ cup soy milk
- ¼ cup water
- Optional: 1/16 tsp zanthan gum
- In a blender, combine all ingredients.
- Zanthan gum serves as a thickener and is optional, and you could also add some ground flax seed or ground chia seed for the same effect.
Dear trusted readers: I also need your thoughts and recommendations for my smoothie obsessions lately. While I have loved 2 separate magic bullet blenders since college, I think it is high time to upgrade in the coming months as I drink more smoothies. What’s your blender? Do you love it or wish for another brand? My search starts now- as much as I love raspberry seeds and blueberry skin in my smoothies, I prefer being able to use a straw!
Drink as quickly as possible for a brain-freeze. I loved the purple color so much that I didn’t add any spinach to this one- because it would make it an ugly brown color- but you can always throw in a cup of fresh spinach for an undetectable nutrition bonus!

Mmmm, beautiful looking smoothie!! Mine are always an ugly poop color because I can’t resist adding spinach. As for the blender, I only use a little Magic Bullet right now but when I move in these next few months I think I’m going to splurge on a Vitamix (eek!!)

We are on the exact same page! My magic bullet is working too hard and sometimes it can’t even tackle ice or spinach stems. That is awesome on the Vitamix though!

OMG so I love pineapples in smoothies because of the creamy/frothy texture they add and I LOVE blueberries in smoothies just because…I never thought to put them together! Definitely need to try this soon!

Me too, Deanna! I couldn’t mess it up by adding spinach haha. I use 1% milk frequently for smoothies but I shared this one with my lactose intolerant boyfriend 🙂

In all the years I’ve made smoothies I don’t think I’ve ever combined pineapple and blueberry. Now I’m not sure why not. Yum!

I have never heard of a fruit share -so freaking cool!!! I LOVE my Blendtec. I use it probably twice a day, actually. It is perfection. I actually have two in my house right now. For the jars, I love the original and wildside. Both are “necessary” in my opinion lol. That’s my pick 🙂

Good to know – I keep getting all starry eyed while looking at $200+ blenders, but they are totally unnecessary. Love my smoothies thick and spoonable!
