These monthly wrap up posts keep getting pushed further and further into the next month- I love that, because it makes me realize how much I am diversifying my content on this little internet space of mine. First and foremost, I want to thank everyone who reached out last Friday after my open and honest post about my journey to a healthier me. The more love we have for ourselves, the more love there is to share with others, and that feeling was echoed with everyone I talked to! Serious virtual hugs!
This next month is my last breath of summer and calm before September hits and I take 16 glorious days of vacation from work. Yep, that’s right. A Labor Day weekend trip to Toronto for a wedding, a quick drive to Buena Vista for an incredible wedding with 14ers as the backdrop… followed by a drive to the airport to jetset across the pond! My family is going on a vacation in Portugal, and of course Noah & I had to plan something crazy to attach onto that… so we are continuing on to INDIA where we will spend 2 weeks in Northern India exploring temples, eating street food (send me good wishes), and walking everywhere. Tell me again how crazy this is because I haven’t wrapped my brain around how many incredible people we will get to visit with.
But this past month? A festive birthday, plenty of tacos and froyo, farm fresh produce and easy cooking (the reason behind my easy summer meals post!). I am just savoring each of these summer days – I can’t get enough of this late evening light. Just go ahead and feast your eyes on this goodness and tell me what plans you have brewin’ for this weekend!
Clockwise from the top:
A delicious Paloma from Leña, a Central American inspired restaurant on Broadway, on opening night
My favorite weekend lunch – these Spanish Cheese & Zucchini quesadillas
Gravlax on an incredible everything bagel on opening day at Rosenberg’s Bagels and Delicatessen
Braised meatballs over grits at Acorn for my birthday
Zucchini & eggplant lasagna over greens
Homemade refrigerator pickles & pickled vegetables
