The last time we sat down and talked casually was in December. Somehow, we made it to spring!? Let’s get comfy, refill our coffee cups, and chat about what’s new behind the blog.
On the foodie front, and why my What I Ate series has been slowed, my Back to Basics January campaign did exactly what I set out to achieve: more homecooking. We have been highly focused on cooking from what we have on hand and being creative in the kitchen. Not only do I feel like I avoided the winter blues by keeping things fresh and light, I also found enjoyment in ingredients I previously shrugged off – frozen cherries, celery, and radishes (among others).
This month in particular has passed quickly due to quick weekend trips with friends, and hosting my sister and mom in Denver. They helped us host a huge housewarming party with all our friends in Denver, and I loved having a big party. I might do a post on the food, because it was so fun to brainstorm appetizer ideas for a crowd!
We did lots of walking, and dined in some of the places I had been craving – fancy sandwiches from Union Station, happy hour at Gozo, seitan wings at City ‘O City, and… all the ice cream shops. I felt satisfied with the foodie/adventure tour I provided of Denver. We lucked out with lots of amazing weather!
I am also indebted to those who showed me around Ann Arbor, San Francisco, and Berkeley this past month – exploring cities on foot and with foodie destinations in mind is my favorite way to travel!
I wanted to let you all know about a change that will be coming for me this year. The Uproot from Oregon kitchen will uproot once again this fall when I head to a new city to pursue my Masters’ in Public Health (read about my path to public health). I have been working towards this step in my career for awhile now, and am excited to get back in the classroom to learn more skills and engage further with the field.
I am in the middle of making my choice and will have another update once everything is firmed up and final, but this space will hopefully continue to grow as I do. Denver will remain my home, and Noah will be holding down the fort that is our new house here. I am in a great spot right now, reflecting on how I’ve grown in my current full-time position and in this virtual space over the past two years. I hope you all are just as excited for what’s to come as I am!
