Whether you’re in 30 degree weather or 70 degree weather, this Healthful Vegetable Soup will cure what ails you. Packed with spices and variety of vegetables and leafy greens, you’ll enjoy the richly flavored broth of this upgraded version of a veggie-packed soup.
The health benefits of cumin, turmeric, and garlic in our diets are widely documented – from regulating blood sugar, reducing inflammation, to boosting our immune systems. I feel good sprinkling these spices abundantly into lots of meals.
Beyond the nerdy nutrition details, the best part is that these spices taste delicious when combined with a variety of veggies in this soup – and you only need 30 minutes!
My favorite meals are the ones that I can feel good about eating a huge bowl of, not only enjoying the taste but knowing I’m doing my body good.
- 1 yellow onion
- 1 large carrot
- 3 cloves of garlic
- 1 tablespoon olive oil
- 1 red pepper
- ½ teaspoon turmeric
- 1 teaspoon cumin
- 1 medium zucchini
- 4 cups vegetable broth
- 1 head of broccoli
- 1 bunch of lacinto kale
- Salt and pepper to taste
- Dice yellow onion and slice the carrot into coins.
- In a large soup pot, add the onion, carrot, and olive oil. Sautee for 5 minutes.
- Dice a red pepper and add it to the pot and sautee for 2 minutes.
- Mince 3 gloves of garlic and add the garlic, cumin, and turmeric to the pot. Stir until fragrant, about 30 seconds to 1 minute.
- Add vegetable broth and bring the soup almost to a boil.
- While waiting for the soup to boil, slice zucchini into thick half moon shapes, chop broccoli into florets and dice kale into small pieces. Add them to the pot when the broth is hot, and turn the heat down to a simmer.
- Cook the soup until the broccoli is tender - about 7 minutes.
- Add salt and pepper to taste and serve hot.
P.S. I need a new recipe development system. Leaving scribbled notes around the house on multiple notepads while working on versions of recipes is not a sustainable strategy! I nearly had a heart attack when I thought I lost this gem of a soup recipe!

I really need to stop being afraid of turmeric. I have some that I never use. I know as a runner it is SO GOOD for me but I feel like it’s really strong?? But I know it isn’t!! I’m going to have to give this a go since you know I trust all your recipes because they’re all a home run 🙂

I dump cumin into my soups all the time, but I haven’t tried adding tumeric yet. Sounds like a great idea though! And OMG, I completely understand the panic when you think you have lost your recipe notes!! So glad you found the recipe for this beauty!

This is the most colorful meal! I use cumin but I don’t use turmeric… I just don’t really like the taste. Is that terrible?

I like ot sprinkle those two spices into everyhting and anything. They are also a power duo, don’t you think? turmeric tastes great on its own but with cumin? oh boy..watch out! 😉
Eeks!! That’s happened to me soooo many times too. So while I used to jot down the recipes on a piece of paper or sticky notes, I found a new system – say hello to my super duper thick notebook. There’s definitely no chance of me throwing it away ;). It’s been working for me so far.
