Try out this simple recipe to make a homemade Raspberry Ginger Soda Syrup – naturally sweetened with honey. This month’s Recipe Redux focuses on “DIY Kitchen Essentials,” and you will be happy to have this one on hand this summer.
A few week’s back, I attended a local food swap in the Denver area. I have always been intrigued by these types of events – meetings of unique types of people from different corners of life. From retirees to paralegals to urban farmers, we got together behind the concept of sharing something we made so that others could enjoy it!
While I brought granola, I traded it in return for incredible goods that we’ve been enjoying: homecured salami and mustard, blueberry BBQ sauce, a loaf of wholegrain sourdough, strawberry peach jam with last summers’ produce, backyard-grown rhubarb (used here!), and a simple strawberry rhubarb soda syrup.
I have made a brown sugar soda syrup with a base of tea bags on this blog before, as well as a blackberry drinking vinegar (a tart fruit syrup!), but I wanted to remake and share another option to share with you all for summer. I love it on ice with lots of club soda, but it would make a great base for a summery patio cocktail as well.
- 1 cup ripe raspberries
- ½ cup water
- ¼ cup honey
- ½ teaspoon fresh minced ginger
- Bring all ingredients to boil on the stovetop, reducing the heat once bubbling. Use the back of a spoon to smash the raspberries as they cook, and stir frequently.
- After about 5 minutes, the mixture should be fragrant and mixed well. Remove the pan from the heat and allow it to cool (it will not be heavily syrupy, but should be sweet upon tasting).
- Strain the raspberry seeds if desired, and store in a jar in the refrigerator for up to 2 weeks.
Having a few specialty items on hand – like soda syrups, a bottle of bitters, fancy crackers and a jar of olives – makes it easy to pull together a summer get together. Consider making your own varieties to have on hand as you find yourself with excess fresh produce this summer!
