Let’s play catch up: It’s June 1 and I have one week of full-time work left! Two years working in diabetes prevention research (read more here) has gone by quickly, and it is bittersweet to be moving on because it means my time in Denver is nearing its end. This week is a busy one – with wrapping up work projects, lots of meals with good friends, and a few longer runs as part of my training plan. On Friday, my best friend from growing up is visiting for the weekend to cap off the celebrations.
Like I mentioned last month, I’m taking the summer to work on some smaller projects and give myself some much needed me time before I head to school in August. I started working farmers markets so I’m outside every Sunday (…and I’m already sunburnt). I have got to keep up on my sunscreen + hat game for the rest of the summer. Finally, we’re getting into summer food quicker than we know – 90 degree days are in the forecast for this week. I’ve been relying on some of my favorite quick summer meals ideas already, like zucchini noodles, power salads with tons of toppings, and meal-size smoothie bowls.
