Last night, we installed an A/C unit in our bedroom window. Denver is heating up so fast I can’t stand it – somehow I managed to forget how uncomfortable sleep was last summer? Hopefully, this window unit will be our savior this summer – along with Balsamic Strawberry Salsa.
When it gets hot, somehow I want alllll the roasted vegetables… and Noah has to remind me that I’m not doing us any favors by heating up the oven. So instead, I’m trying my hand at quick summer dishes – like this salsa – that can be served a few nights in different ways.
I loved this Balsamic Strawberry Salsa with crackers over a few days as an afternoon snack, but it showed its versatility when served as a flavorful topping to plain baked chicken another night. I could see it being wonderful with a light flavored fish as well!
- 2 cups finely diced strawberries
- 1 large hothouse tomato, finely diced
- ¼ cup sliced green onions, white and light green parts
- ¼ cup finely diced red onion
- 1 tablespoon white balsamic vinegar
- 1 tablespoon olive oil
- ⅛ teaspoon sea salt
- Blue Diamond Natural Almond Nut-Thins
- Dice strawberries and tomato. Allow the tomato liquid and seeds to drain before adding them to a bowl with the strawberries.
- Slice the green onions and dice the red onion and add them to the bowl.
- Toss the mixture with white balsamic, olive oil, and sea salt. Taste and adjust seasoning as desired.
- Serve salsa immediately with Blue Diamond Natural Almond Nut-Thins.
If you don't have white balsamic vinegar, you can use apple cider vinegar or white wine vinegar as substitutions (I recommend starting with ½ tablespoon in that case and adjusting to taste).

If I’m close to an ocean I love the summer heat. If not, I’m kind of a brat, but I still prefer it to the cold.
This salsa looks incredible. Strawberries are a sure sign of summer and I love the mix of spring onions and white balsamic!
