Somehow two whole months have flown by since we last chatted in my What I Ate series, as I was getting ready to leave my full-time job and hang out. Fast forward: Seriously, where did summer go?
As I gear up to move to Berkeley, California, and start graduate classes in a month, I know things are going to get more hectic. I have two weeks left to cram all my Denver To Do List in (that links to an old post with some of my favorite things!) – including running my half marathon, pack up what I think I need to bring with me to be a successful grad student, and tag team the drive to Portland with Noah to spend a week with my family. Then, it’s game time and I’ll have just a few days to organize my things in my new apartment before sitting down in class and learning. Eek!!
Don’t get me wrong, I’ve been looking forward to going back to school since I started the application process, but it feels weird for it to finally be here and real. I’m trying to maximize each day, and part of that has meant stepping back from some blog tasks to focus on the here + now instead of the internet.
Lately, there have been lots of simple meals at home and coffee with friends. Exactly how I wanted this summer to go! The chickens are laying nonstop and I’m finally harvesting some goodies from the garden, so it took me some digging to find some exciting photos to share with you beyond bowls of zucchini, corn, fried eggs, fruit, and smoothies (P.S. This Mocha Freeze is my favorite afternoon sweet treat right now!).
Let’s catch up on what I’ve been enjoying this summer…
