Easy to prep and lightly sweetened, these Blueberry Pie Overnight Oats are a great portable breakfast option reminiscent of a summery blueberry pie.
After making my 5 Ingredient Vegan Chocolate Banana Overnight Oats a few too many times, I needed a break from the chocolatey version – and started working on this overnight oat recipe with additional texture.
The “blueberry pie” name for these overnight oats comes from the fact that there are bursting fat blueberries in the mix, along with swirls of sweet blueberry jam and a crunchy oat topping. Who doesn’t want to eat pie for breakfast?
As blueberries come flooding into the supermarket this month, you can use fresh berries for this recipe. But don’t despair – frozen work just as well, and I’ve tested it both ways!
In order to follow the recipe as written, you will need to first prep a batch of Blueberry Chia Jam. We will be using it to layer the overnight oats so it really feels studded with fruity flavor.
Alternatively, use your favorite store-bought blueberry jam or preserves, or additional fresh berries and sweetener.
- ⅓ cup old fashioned oats
- 1 cup unsweetened vanilla almond milk
- ½ of a medium banana
- 2 tablespoons chia seeds
- ½ cup blueberries
- Pinch of salt
- 3 tablespoons blueberry jam
- ¼ cup granola
- Fresh blueberries
- In a container, combine oats, almond milk, the half of a banana (mashed very well), chia seeds, blueberries (fresh or frozen), and salt. Mix well and refrigerate for 6 hours to overnight.
- When ready to serve, layer ⅓ of the overnight oats mixture at a time with 1 and ½ tablespoons of jam spread in between the layers. You can also swirl the jam into the whole recipe. Adjust sweetness to taste (with low sugar jam, I tend to add a teaspoon or two of maple syrup) and top with granola and fresh berries.
Perfectly sweetened from the mashed banana, with juicy berries and creamy/chewy oat texture with crunchy granola on top –> AKA, my dream recipe that hits all the important breakfast qualities and ingredients.
