Ditch the box mix and whip up your own Wholegrain Buttermilk Pancake Mix! Made with whole wheat flour and oats, this simple recipe works for pancakes + waffles and is great for gifting in a jar this holiday season.
Hi Friday! It’s the last day in my week of new Edible DIY gifts. The weekend is nearing, which means pancakes. Might I suggest you ditch the box mix and consider stirring together some simple ingredients for your own pancake + waffle mix?
While I love my 3-ingredient pancakes, they’re different than a real deal pancake. One of my roommates also dislikes bananas… so it’s nice to brunch together on this batch of wholesome, oat packed, subtly sweetened, wholegrain buttermilk pancake mix!
To reduce the ingredients needed for the recipient (or… you!), we use 1 and 1/4 cups of buttermilk powder added into the dry mix of whole wheat pastry flour, oats, sugar, baking soda, baking powder, and salt. I used this buttermilk powder from NOW Foods, a brand I keep in my kitchen, but I have seen many options in grocery stores too- so it’s not too hard to find!
That way, you can keep this mix in a jar and just add 3/4 cup water, 1 egg + 1 tablespoon oil to 1 cup of dry mix each time you want to mix up a batch of pancakes. No awkward amounts of fresh buttermilk needed!

- 2½ cups whole wheat pastry flour
- 1 and ½ cups old fashioned oats
- 1 and ¼ cups buttermilk powder
- 2 tablespoons white sugar
- 1.5 tablespoons baking powder
- ½ tablespoon baking soda
- ½ tablespoon salt
- In a bowl, combine whole wheat pastry flour, oats, buttermilk powder, sugar, baking powder, baking soda, and salt. Alternatively, layer these ingredients in a jar for gifting and include instructions below.
- Measure out 1 cup of the dry mix and combine it with ¾ cup of water, 1 large egg, and 1 tablespoon oil. Let the batter sit for 20 minutes and then cook. Makes 6-8¼-cup sized pancakes, serving two.
- Measure out 1 cup dry mix and combine it with ¾ cup water, 1 large egg, and 2 tablespoons oil. Let the batter sit for 20 minutes and then cook. Makes ~4 waffles, serving two.

When mixing up the pancake mix, you can make these pancakes dairy-free by:
- Omitting the buttermilk powder
- Editing instructions for pancake making: Measure out 1 cup of the dry mix and combine it with 1 cup of non-dairy milk, 1 large egg, and 1 tablespoon oil. Let the batter sit for 20 minutes and then cook. Makes 7 1/4 cup-sized pancakes.
I had a few friends over to test the dairy-free version in comparison to the buttermilk version, and we agree that they’re both delicious – so if you can’t find buttermilk powder, this is a great option too.
