New to my What I Ate Series? Today, I’m sharing a recap of October through December through the restaurants I’ve visited, casual snacks and meals I’ve made, and a general life update.
Hi friends! It’s been awhile since we sat down and chatted about anything beyond the food (well, okay, there’s still some food photos today.. I can’t help it!). These past few months of my first semester of graduate school at Berkeley have been a whirlwind, to say the least. I know I am in the right place and it’s being confirmed as I engage more with my peers and get to sign up for classes beyond the requirements for my 2 year degree. I’m already 1/4 of the way done and I can’t believe it!
I am finally on my long winter break and using it as time to build up this space with ideas for 2016 and more. A redesign is on it’s way, and I can’t wait to share it with you really soon. I had a week of time with my parents in Portland to relax over the Christmas holiday, and was surprised upon returning to Denver yesterday by Noah who schemed up a trip for us … to Tokyo, Japan! So, starting tomorrow, I’ll be eating udon and sushi and walking around and exploring for 6 days. The best way to ring in the new year, if you ask me! I can’t wait to touch down in Tokyo – watch my Instagram account for some photos.
And after that? I’ll be here in this space, back stateside, sharing healthy inspiration to get your 2016 off on a tasty trajectory with healthy, simple meal ideas. Let’s stick together as we move into 2016 and continue to inspire one another!

So what have I been eating lately? A mix of healthy meals and tasty holiday treats fill What I Ate #26!

Simple tofu scramble to clean the fridge before traveling
