This Simple Zesty Cabbage Slaw is a wonderful side dish as the weather warms up, packed with healthy ingredients you can throw together quickly.
Whether it be tacos, pulled pork, or grilled fish, we are getting close to summer eats and the need for simple sides. Today’s recipe is a quick slaw to serve alongside any of your favorite warmer weather favorites. The best part? No cooking involved, which is perfect during the hot summer months!
With just some oil, lime juice, and seasonings, shredded cabbage is transformed into a mouthwatering zesty side that is quite budget friendly. You can always add additional ingredients (like carrots or sunflower seeds) if you have them on hand! Some of my favorite ways to enjoy this side dish is part of a taco topping bar, or as a side with rice and grilled fish.

Ingredients
- 1 small head of cabbage, shredded (red, green, or a combination)
- ¼ cup olive oil
- 3 tablespoons lime juice
- ½ teaspoon salt
- ¼ teaspoon chili powder
- ¼ teaspoon garlic powder
Instructions
- Shred cabbage into bitesize pieces.
- Whisk together oil, lime juice and seasonings. Pour over the shredded cabbage and toss well to combine.
- Allow the slaw to chill in the fridge for 10 minutes so the flavors come together.
- Adjust seasoning to taste and serve.
Notes
The slaw can be made in advance by prepping the dressing and waiting to combine it with the shredded cabbage. Once mixed, the slaw is best enjoyed within 1-2 days.
