Ingredients
  • 1 large apple
  • 2 tablespoons butter
  • ¼ teaspoon cinnamon
  • 3 large eggs
  • ½ cup whole wheat flour
  • ½ cup apple cider
  • ¼ cup milk
  • ¼ cup sugar
  • ½ teaspoon vanilla extract
  • Powdered sugar and lemon slices to serve
Instructions
  1. Preheat the oven to 425 degrees.
  2. Slice your apple thinly and begin sautéing them in a 10-12 inch diameter cast iron pan with butter and cinnamon until soft.
  3. In the meantime, prepare your pancake batter. In a blender or food processor, combine eggs, flour, apple cider, milk, sugar, and vanilla. Blend for 30 seconds until frothy.
  4. Once the apples are mostly cooked through, spread them in an even layer along the bottom of the pan and pour the pancake batter on top.
  5. Immediately transfer the hot pan to the oven and bake for 20 minutes.
  6. Remove from the oven and slice into 4 pieces. Serve warm with powdered sugar and a squeeze or lemon, or additional cinnamon and a dash of maple syrup.
Notes
This pancake will rise a bit more if the eggs, apple cider, and milk are at room temperature before starting the recipe.
