In the meantime, prepare your pancake batter. In a blender or food processor, combine eggs, flour, apple cider, milk, sugar, and vanilla. Blend for 30 seconds until frothy.
Once the apples are mostly cooked through, spread them in an even layer along the bottom of the pan and pour the pancake batter on top.
Immediately transfer the hot pan to the oven and bake for 20 minutes.
Remove from the oven and slice into 4 pieces. Serve warm with powdered sugar and a squeeze or lemon, or additional cinnamon and a dash of maple syrup.
Notes
This pancake will rise a bit more if the eggs, apple cider, and milk are at room temperature before starting the recipe.
