Pecan Pie Bites

Ingredients
  • 2 cups pitted dates
  • 2 cups chopped pecans
  • 1 teaspoon blackstrap molasses
  • ¼ teaspoon salt
Instructions
  1. Remove the pits from the dates (if dates are extremely dried out and not squishy, soak them in warm water for 20 minutes and drain before continuing with the recipe). I use Deglet dates which have a honey-like taste.
  2. Chop pecans if not already chopped.
  3. Measure the dates and blend them in a food processor until a paste has formed (about 1 minute).
  4. Add pecans, molasses, and salt, and process until the mixture is well combined (about 30 seconds).
  5. Wet your hands and form small balls (~1.5" in diameter) with the mixture, setting them on a baking sheet or in a plastic container as you go. I was able to make about 20 bites from the recipe but this will depend on the size.
  6. Store the bites in the refrigerator or freezer until ready to eat.
Notes
Alternatively, press the mixture into a parchment paper/saran wrap lined baking pan and then then cut into 1-inch square shapes. You can wrap these up in individual portions.
