One Pot Broccolini Pasta with Sausage and White Beans

Ingredients
  • 1 Italian sausage link
  • ¼ of a white onion
  • 8 ounces dry whole wheat fusilli pasta
  • 2 cups vegetable or chicken broth
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • 15 ounces great northern beans
  • 1 bunch broccolini
  • Garnish: red pepper flakes and/or parmesan to taste
Instructions
  1. Remove Italian sausage from casing and crumble. Dice white onion.
  2. Saute the crumbled sausage and diced onion in a large pot on medium heat for 5 minutes.
  3. Add dry pasta, broth, minced garlic, and salt to the same pot and allow it to come to a boil. Once boiling, cover the pot and reduce the heat to a simmer for 10 minutes.
  4. While waiting for the pasta to cook, drain and rinse the white beans. Trim down the stalks of the broccolini. Cut broccolini into bitesize pieces.
  5. After the pot has simmered for 10 minutes, add the white beans and broccolini to the pot and simmer for another 5 minutes, covered once more.
  6. Remove the lid and stir the pasta, testing for doneness. If your broccolini or pasta need more time, cover the pot for another 2-3 minutes.
  7. Let additional broth boil off for 1-2 minutes if necessary, uncovered.
  8. Serve the pasta with red pepper flakes and/or parmesan if desired.
