Ingredients
  • 1 cup unsalted almond butter
  • ½ cup coconut sugar
  • 2 large eggs
  • ½ teaspoon salt
  • 1 cup trail mix (see notes)
Instructions
  1. Preheat the oven to 350 degrees.
  2. Vigorously stir your jar of unsalted almond butter before the next step. It should be somewhat drippy, not dry and crumbly.
  3. In a bowl, combine almond butter, coconut sugar, eggs, and salt.
  4. Roughly chop trail mix before adding it in, and then stir it into the cookie dough.
  5. Using a tablespoon measure, scoop dough into tablespoon-sized balls onto 2 parchment lined baking sheets. The shape will hold during baking so feel free to flatten them if you prefer flat cookies.
  6. Bake the cookies for 10 minutes and allow to cool on the pan for 3-5 minutes before transferring to a rack to cool fully.
Notes
We created our own trail mix for these cookies, and feel free to do the same! If you are using a premade trail mix that is salty, omit the added salt in this recipe.
Our trail mix consisted of ¼ cup each of shredded unsweetened coconut, chopped raw unsalted almonds, raisins, and dark chocolate chips.
Substitute coconut sugar with granulated sugar if necessary.
Keep cookies in an airtight container on the counter for a day, or in the fridge for up to one week.
