Raspberry Ginger Soda Syrup

Ingredients
  • 1 cup ripe raspberries
  • ½ cup water
  • ¼ cup honey
  • ½ teaspoon fresh minced ginger
Instructions
  1. Bring all ingredients to boil on the stovetop, reducing the heat once bubbling. Use the back of a spoon to smash the raspberries as they cook, and stir frequently.
  2. After about 5 minutes, the mixture should be fragrant and mixed well. Remove the pan from the heat and allow it to cool (it will not be heavily syrupy, but should be sweet upon tasting).
  3. Strain the raspberry seeds if desired, and store in a jar in the refrigerator for up to 2 weeks.
Notes
I use 2 tablespoons of syrup per cup of club soda, so this recipe would make 8 drinks. This recipe can be doubled or tripled easily. Adjust sweetness as desired, or based on ripeness of fruit.
