Balsamic Strawberry Salsa

Ingredients
  • 2 cups finely diced strawberries
  • 1 large hothouse tomato, finely diced
  • ¼ cup sliced green onions, white and light green parts
  • ¼ cup finely diced red onion
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon olive oil
  • ⅛ teaspoon sea salt
  • Blue Diamond Natural Almond Nut-Thins
Instructions
  1. Dice strawberries and tomato. Allow the tomato liquid and seeds to drain before adding them to a bowl with the strawberries.
  2. Slice the green onions and dice the red onion and add them to the bowl.
  3. Toss the mixture with white balsamic, olive oil, and sea salt. Taste and adjust seasoning as desired.
  4. Serve salsa immediately with Blue Diamond Natural Almond Nut-Thins.
Notes
If making this recipe ahead of time, you can refrigerate the mixture and drain it before serving if you prefer a chunky salsa. Leftovers can be served on top of grilled chicken or salmon.
If you don't have white balsamic vinegar, you can use apple cider vinegar or white wine vinegar as substitutions (I recommend starting with ½ tablespoon in that case and adjusting to taste).
