Lemon Garlic Haddock

Ingredients
  • 2 minced garlic cloves
  • 1 teaspoon olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt and pepper
  • 2 4-ounce fillets of haddock
  • Garnish of green onion
Instructions
  1. Preheat the oven to 350 degrees.
  2. Use a fork to mash the garlic as much as possible after mincing. In a small bowl, mix together the garlic, olive oil, lemon juice, salt and pepper.
  3. Line a baking sheet with parchment or foil and place the haddock on top. Divide the lemon garlic mixture overtop of both of the pieces of fish.
  4. Bake the fish for 20-25 minutes, until you can stick a fork into the fish and twist it and it is flaky.
  5. Garnish the fish with green onion and serve.
