If using champagne flutes, add 2 ounces of each ingredient. If using wine glasses, add 4 ounces of each ingredient. Either way, you want an equal proportion.
Add a star anise pod and a few allspice berries to each glass.
Serve immediately.
Notes
Be sure the sparkling wine is chilled in advance and that you pick an apple cider with sediment instead of clear apple juice - the flavor will be richer. Shake up the cider before pouring.
