Serves: 5 cups dry mix
Ingredients
Dry Pancake Mix (makes 5 cups dry mix)
  • 2½ cups whole wheat pastry flour
  • 1 and ½ cups old fashioned oats
  • 1 and ¼ cups buttermilk powder
  • 2 tablespoons white sugar
  • 1.5 tablespoons baking powder
  • ½ tablespoon baking soda
  • ½ tablespoon salt
Instructions
  1. In a bowl, combine whole wheat pastry flour, oats, buttermilk powder, sugar, baking powder, baking soda, and salt. Alternatively, layer these ingredients in a jar for gifting and include instructions below.
Pancake Directions
  1. Measure out 1 cup of the dry mix and combine it with ¾ cup of water, 1 large egg, and 1 tablespoon oil. Let the batter sit for 20 minutes and then cook. Makes 6-8¼-cup sized pancakes, serving two.
Waffle Directions
  1. Measure out 1 cup dry mix and combine it with ¾ cup water, 1 large egg, and 2 tablespoons oil. Let the batter sit for 20 minutes and then cook. Makes ~4 waffles, serving two.
Notes
To gift, place the mix in a jar that fits 5 cups and add instructions for pancakes and/or waffles.
