Ingredients
  • 2 ripe bananas, mashed (~1 cup)
  • 1 cup old fashioned oats
  • ⅓ cup Blue Diamond Whole Natural Almonds
  • Optional pinch of salt
Instructions
  1. Preheat the oven to 350.
  2. Peel ripe bananas (they should have some brown spots), and mash bananas with a fork into a bowl until puréed.
  3. Stir in oats, almonds and salt.
  4. Line a baking sheet with parchment paper and use a ¼ cup measure to form 6 cookies. Flatten them a bit with your hand into cookie shape.
  5. Bake cookies for 15 minutes until lightly browned and firm. Allow them to cool before removing from the parchment paper.
  6. Store in an airtight container in the fridge for up to one week.
