Leaf Lettuce Salad with Black Rice, Snap Peas and Avocado

Ingredients
  • 2 cups cooked black rice
  • 1 large carrot, chopped (1 cup)
  • 1 cup chopped sugar snap peas
  • ⅓ cup chopped green onion or tops of spring onions
  • 1 medium Hass avocado, cubed
  • ¼ cup sunflower seeds
  • ½ lemon, juiced
  • 2 tablespoons avocado oil
  • Scant ¼ teaspoon salt
  • 1 large head of leaf lettuce, about 6 cups packed
Instructions
  1. Prepare black rice (also known as forbidden rice) according to package instructions. About ¾ cup dry rice will yield 2 cups cooked.
  2. Chop up carrots, sugar snap peas, avocado, and green onion, and place them in a bowl. Add in cooked black rice and sunflower seeds.
  3. Toss the mixture together with lemon juice, oil, and salt.
  4. Rinse and dry lettuce, and rip or chop the lettuce into bitesize pieces. Add the lettuce to the bowl and toss well before serving.
