Peanut Butter Oatmeal Cookies

Ingredients
  • ½ cup unsalted peanut butter (see note)
  • ¼ cup old fashioned oats
  • 3 tablespoons granulated sugar
  • 1 large egg
  • ⅛ of a teaspoon salt
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a bowl, mix together peanut butter, oats, sugar, egg and salt. Stir together vigorously until everything is incorporated.
  3. Line a baking sheet with parchment paper or a silicone baking mat. Using your hands, form 1 tablespoon-sized balls and flatten them a bit onto the baking sheet. Use a fork to make cross-hatches in the tops of the cookies.
  4. Bake the cookies for 8-9 minutes, until the bottoms are lightly golden.
  5. Allow them to cool before storing in an airtight container for up to 5 days.
Notes
Before starting this recipe, stir your peanut butter well to incorporate oils fully. You want to use a peanut butter that is loose enough to drip off of your spoon, but not runny.
