In a bowl, mix together peanut butter, oats, sugar, egg and salt. Stir together vigorously until everything is incorporated.
Line a baking sheet with parchment paper or a silicone baking mat. Using your hands, form 1 tablespoon-sized balls and flatten them a bit onto the baking sheet. Use a fork to make cross-hatches in the tops of the cookies.
Bake the cookies for 8-9 minutes, until the bottoms are lightly golden.
Allow them to cool before storing in an airtight container for up to 5 days.
Notes
Before starting this recipe, stir your peanut butter well to incorporate oils fully. You want to use a peanut butter that is loose enough to drip off of your spoon, but not runny.
