I am lazy when it comes to muffin-making (the proof is in my lemon raspberry yogurt muffins or my banana nut cupcakes). I think of making muffins when I want to put one into my mouth no more than 30 minutes from the present, so there is no elegance to my mixing in a bowl with a wooden spoon. No-stand-mixer-needed-muffins: how easy can it get? The whole wheat flour and oat flour base is hearty without being too dry or dense, and I can’t get enough of the date and almond paste chunks thrown throughout each muffin. Have you noticed my cupcake recipes are also eerily similar to muffins? These muffins would easily transform into almond date cupcakes with a delicious date frosting (now I can’t get this idea out of my head). Happy Friday! Whole Wheat Almond Date Muffins (makes 12)
- 1 and 1/2 cups white whole wheat flour
- 1/2 cup ground oats (or oat flour)
- 1/3 cup brown sugar
- 1 and 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg and 2 tbsp oil
- 1 tsp almond extract
- 1 and 1/4 c unsweetened almond milk
- 1/2 cup fresh medjool dates
- 1/4 cup almond paste
- 1/2 cup sliced almonds
Combine all ingredients from flour to almond milk with a wooden spoon (it just has that baking magic). Chop up dates into 6-8 pieces per date, and mash the almond paste into the dates so it will somewhat evenly distribute into the final product. Fold the dates, almond paste, and sliced almonds into the muffin batter.
Fill the cupcake liners up to 3/4 so they will slightly round up for the finished product. Bake at 375 for 15 minutes. Eat one fresh out of the oven… divine. The longer they cool, the less they will stick to the cupcake liners. These will stay tasty for about 4 days covered on the counter, if you can control yourself that long.
